Crunchy Oat Waffles
(from the AMA Family Health Cookbook)
1 cup boiling water
¾ cup regular or quick rolled oats
1 ¼ cups all-purpose white flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
2 tablespoons granulated sugar
3 Tbsp. oil
1 egg
1 egg white
1 ¼ cups buttermilk
Heat a waffle iron; coat lightly with vegetable oil spray. In a medium bowl, pour the boiling water over the oats. Stir to combine and set aside for 3 minutes. In a large bowl, whisk together flour, baking powder, baking soda and salt. Whisk the oil and sugar into the oat mixture. Add the egg and egg white and whisk until blended. Whisk in the buttermilk. Add the oat mixture to the flour mixture just until blended. For 8 inch round waffle, ladle about 1 cup batter into waffle iron; (adjust amount for other sizes). Bake according to machine’s instructions.
